		<description><![CDATA[There are numerous canadian companies that make delicious coffee. You should consider something like Craft Coffee (not affiliated) that sends out three different roasters a month. You could also look through their past featured coffees to see what might be available in Toronto, or willing to ship. Coffee is just like beer; the &quot;craft movement&quot; is great to support. Supporting local small businesses, often families that take much more care and attention then macro producers (like kicking horse).

Seems that gaining knowledge of coffee would go hand in hand for your love for scandinavian and Japanese aesthetic; both areas are known for their deep love of coffee. 

Tim Wendleboe and Coffee Collective are two of the biggest in scandinavia. Check out this New York Times article (http://tmagazine.blogs.nytimes.com/2012/08/28/ristretto-first-look-at-the-new-coffee-collective-roastery-and-coffee-bar/)
 
Maybe check with Parlour Coffee for their input; they seem to stock your recent book and carry some different roasters.

Not sure exactly what is available in Toronto as I am based in Victoria where there is amazing coffee roasters on every corner.]]></description>

I don&#039;t completely understand the benefits of the star shape design on the Ando dripper but he told me the airflow around the paper filter is important, and that is the reason for the shape. Maybe you can elaborate? I think the Hario has similar ridges in the filter. Haven&#039;t noticed a diminished quality. Beans on the other hand, well we have yet to find any that are a guaranteed win. We&#039;ve been buying Kicking Horse beans, mostly because of what is available in our neighborhood.
